Abstract
Gelatin is often found in some industries. The ingredients commonly used are from the skin and bones of pigs and cows, which can cause doubt whether or not the material used to make the gelatin is free. The collagen content in the skin and bones if treated with acid or alkali with the extraction method can make collagen converted into gelatin. The selection of materials used for extraction is tilapia bones, because the waste is quite easy to find and has not been processed much. Processing gelatin from tilapia bones can be one of the things that contributes to the problem of waste disposal and adds selling value to the product. Developments in the fish processing industry can produce waste in the form of bones that can be reprocessed into gelatin. Acid concentration and bone soaking time can affect how much yield you get. The acid compound used is hydrochloric acid which has a concentration of 4%, resulting in water content of 10.995%, 12.301%, and 12.949%.
