Abstract

Sari Karak Solo, a micro-enterprise (UMKM) producing rice crackers (karak), still relies on conventional sun drying, so the process depends heavily on the weather and yields inconsistent product quality; drying takes 8–12 hours in clear weather and up to 2–3 days when it is cloudy or rainy. This study aims to design a karak drying oven that fits the user's needs using the Quality Function Deployment (QFD) method. Data were gathered through observation, interviews, and questionnaires distributed to 15 respondents, representing the entire workforce population of the enterprise (total sampling), then processed into a House of Quality (HoQ) matrix. The results identified 12 customerrequirements translated into 13 technical characteristics, with the temperature control system (13.99%), operational safety (11.28%), and heating system (10.84%) as the highest priorities. The proposed design is an LPG gas dryer with forced convection, a capacity of 100–150 trays (±50 kg) per batch, and a drying time of 4–6 hours at 60–80°C, engineered to achieve a final product moisture content that meets crackers quality standards (SNI 2713:2009, maximum 12%). Benchmarking gave the design the highest suitability score (4.69), confirming it is feasible as an alternative to conventional drying.
