Abstract

Makan Bergizi Gratis (MBG) program relies on the Satuan Pelayanan Pemenuhan Gizi (SPPG) as a large scale nutritious food production unit. This SPPG has a production capacity of 3,273 portions, faces time pressure problems that cause delays and potentially impose mental workload on employees, yet no structured measurement of this condition has been conducted. This study employed the Defense Research Agency Workload Scale (DRAWS) method validated through Content Validity Ratio (CVR) with 5 experts. The study involved 42 employees, and the results showed that the portioning division recorded the highest mental workload at 73.18%, all employees in the overload category, the distribution division at 59.33% with some employees overloaded, the cooking division at 58,6% 5 employee experiencing overload, while the ingredient preparation division 33.33% and foodtray washing division 29.83% had all employees in the underload category. The Time Pressure dimension to be the dominant contributor across all divisions. A mental workload gap of 43.35% between divisions indicates an imbalanced workload distribution caused by time pressure accumulating from one stage to the next throughout the production chain. Improvements that SPPG can implement include visual guidelines for portioning, structured meal scheduling, providing step-by-step hygiene checklists, and establishing distribution priorities.
