Abstract

KSB Tofu Factory is a medium-scale tofu manufacturing industry that relies on manual labor throughout its production process, requiring workers to perform both physically and mentally demanding tasks. Repetitive physical activities, continuous concentration to maintain tofu quality, and time pressure to achieve production targets have the potential to cause fatigue and increase workload. This study aims to analyze the mental and physical workload of production workers, identify the dominant factors affecting workload, and propose improvement strategies. The Defence Research Agency Workload Scale (DRAWS) method was used to assess mental workload, while the Cardiovascular Load (CVL) method was employed to evaluate physical workload. The results showed that, based on the DRAWS method, 8 workers were classified in the overload category and 4 workers in the optimal load category, with Output Demand (OD) and Time Pressure (TP) identified as the dominant contributing factors. Based on the CVL method, the %CVL values ranged from 20.97% to 43.81%, with 7 workers classified as requiring improvement and 5 workers classified as not experiencing fatigue. The boiling and molding sections exhibited the highest levels of both mental and physical workload. The proposed improvements include adjusting production targets according to workers' capacity, implementing job rotation between workstations, and providing short rest breaks (micro-breaks) to reduce workload and improve work productivity.
