Abstract
The rapid growth of the coffee industry has increased the demand for roasting processes capable of producing consistent flavor and aroma quality. However, small-scale coffee roasting is still commonly performed manually, so the resulting roast level is often inconsistent since it depends heavily on the operator's experience and observation, which can reduce final product quality and production efficiency. This study aims to design and build a small-scale coffee roasting machine based on the Internet of Things (IoT) capable of producing light roast and medium roast levels more consistently through an automatic temperature control system and process monitoring via smartphone. The research method includes a literature review, hardware and software design, prototype development, system integration, and performance testing. The system uses an ESP32 microcontroller as the main controller, a K-type thermocouple sensor with a MAX6675 module to measure the roasting chamber temperature, and an MQ 2 sensor to detect smoke density during the roasting process. A finned heater is used as the heat source, while a DC gearbox motor rotates the roasting drum to achieve a more even heat distribution. The machine provides coffee capacity options of 100 grams, 200 grams, and 300 grams, each with a different target temperature for every roast level, and is equipped with an LCD, physical buttons, and the Blynk application for monitoring and control via smartphone. When the smoke value exceeds a predetermined threshold, the system automatically performs a cut-off by turning off the heater and motor as a safety feature. Test results show a maximum temperature reading difference of 2.22% compared to the measuring instrument, along with consistent roasting results that align with the expert roaster's assessment.
