Abstract

UMKM Tahu Pak Eko produces white tofu with a daily soybean consumption of 280 kg. The tofu cutting activity is performed manually using simple, non‑ergonomic tools such as knives and wooden rulers, taking 20 minutes to cut every six boards, with a total of 70–80 boards cut daily. The Nordic Body Map questionnaire resulted in a score of 72, indicating the need for corrective action. This study aims to evaluate working posture using the Rapid Entire Body Assessment (REBA) method and to design an assistive cutting tool using the Quality Function Deployment (QFD) approach to identify worker needs. The analysis showed that three tofu-cutting sub-activities had high REBA scores, horizontal cutting score 7, vertical cutting score 7, and transferring tofu into containers score 9. The design was developed based on worker requirements, including a worktable height of 95 cm adjusted to standing elbow height to support a neutral posture, a lever position aligned with shoulder width 31.32 cm to prevent excessive body rotation, the use of wheels for easier mobility, a handle width of 9.43 cm tailored to hand dimensions, and a gap-free design to facilitate cleaning. After conducting a posture simulation using Tecnomatix Jack, the REBA scores decreased to 2 for the cutting activity and 3 for the transferring activity, both of which fall into the low-risk category
