Abstract
Currently, the level of human need for water is very high. Water is a basic human need that must be met every day. Therefore, drinking water must meet health requirements, both physical, chemical, radioactive and microbiological so as not to cause health problems (pathogens). Pathogens in beverages can contaminate food through beverage handlers, equipment, water or through contaminated raw materials. This is shown by the BPOM annual report (2016) which states that poor hygiene and sanitation are still a problem in beverage production. Purpose to review the relationship between hygiene and sanitation on Escherichia coli bacteria contamination in beverages. This type of research is a literature review, which is a method that is carried out by reading, understanding, reviewing, and critiquing literature from various research publications. Secondary data was traced through the science direct portal, google scholar, and PubMed. Based on the search results, the researcher found 257 literature on the google schoolar portal, 47 literature on PubMed, and 45 literature on sciencedirect. The screening results obtained five literature that matched the inclusion criteria. The screening results obtained five literature that matched the inclusion criteria. The results show that four literatures have a relationship with personal hygiene variables, one journal shows a relationship between equipment sanitation, and two journals show a relationship between water sanitation and the presence of E. coli in drinks. Beverage hygiene and sanitation need to be improved to protect beverages from contamination and disease-transmitting microorganisms to prevent foodborne illness.
