Abstract
Introduction: The hospital dining service model is carried out to provide food with good quality, the amount according to the patient's needs and proper service so that patient satisfaction with the hospital can be obtained. The right service model can make patients consume more portions of the food they order because patients have the opportunity to order food when their appetite is good, which will reduce the patient's leftovers and increase patient’s satisfaction. Objective: This study aimed to analyze the correlation between the food service model with the patient's food waste and satisfaction in inpatients without a special diet in the hospital. Methods: This research study used literature review method through journal searches used the PubMed and Google Scholar journal sites. The selected journals were in English and Indonesian, had full text formats and had been published for the last 6 years starting in September 2016. The selected study used a cross sectional and cohort research design with data on food service models, patient leftovers, and patient satisfaction. Results: The five studies showed a significant correlation between food service and leftovers and patient satisfaction with food service. Studies showing the correlation between food service and patient leftovers had a p-value of 0.001 (Neaves et al, 2022); 0.01 (McCray et al, 2020); 0.01 (McCray et al, 2018); 0.001 (McCray et al, 2018); 0.0001 (Iqbal et al, 2016). Meanwhile, studies showing the correlation between food service and patient satisfaction with food service had a p value of 0.007 (Neaves et al, 2022); 0.04 (McCray et al, 2018); 0.0001 (Iqbal et al, 2016). Conclusion: Hospital food service model showed a significant correlation with hospital patient's leftover meals and patient satisfaction with hospital services.
