Abstract

Indonesian people are already very familiar with banana trees. Besides the fruit, people can also use other parts of the banana tree. Among them besides bananas, there are banana hearts, banana leaves to banana stems. The banana kepok bongol flour formulation contains fiber 13.5 0.2%, protein 2.10 0.3%, fat 17.28 0.05%, carbohydrates 63.38 1.6% and energy 417.20 5.4 cal / 100 g. The starch in this banana gedebog resembles the starch of sago flour and tapioca flour. The existing noodle variants make it an attraction for people's consumption. Types of noodles that are popular and favored throughout the world are instant noodles. The raw materials contained in the manufacture of instant noodles are flour, salt, and palm oil.
