Abstract

Cassava is the second biggest agricultural product after paddy with more or less two million ton annual total production number. Cassava is a fragile damage commodity and couldn’t be storage for a long time. To reduce those damaging risks, cassava can be processed into other product so that it could be stored for a long time, such as tapioca flour. One of many ways to process cassava into tapioca flour is through drying process on grated cassava starch use machine flash dryer. The flash dryer machine works by entering wet material that would be dried into the inlet (feeder) and then brought into the hammer mill using screw conveyor. Then, heating is given to the wet product from the air heater, so a heat and mass transfer process occurred. Hot air and the drying product then brought to the cyclone after the process. This research is aimed to determine the drying product quality using the parameter of flour final mass, the temperature of final flour, residence time, moisture rate, and drying efficiency. The volume flow rate variations used were 0,0554 m^3⁄s ; 0,1221 m^3⁄s ; 0,1933 m^3⁄s; 0,2656 m^3⁄s by using single cyclone and double cyclone. The optimum drying result obtained when using double cyclone with the volume of cold fluid flow rate was 0,0554 m^3⁄s with the results obtained are residence time is 7,75 second, temperature of final flour is 41℃, the mass of final flour is 1,65 kg, the moisture content is 13,131% and drying efficiency is 6,0207%
