Abstract
This study aims to determine the optimal variation of the cyclone height and variation of the drying air temperature of the drying process on wet flour dough, especially starch, using a flash dryer.The research done using 1 cyclone flash dryer at 2.50 meters, 3.50 meters, 4.5 meters high with variations temperatures of 100oC, 110oC, and 120oC. The flour mixture that has been mixed with 1300 ml of water to be put in the screw conveyor into the hammer mill, and then hot air get flowed through the flash dryer continuously to dry the flour mixture, the dryed flour then exit through the cyclone separator.From the research that has been done, it can be concluded that the higher the height of the cyclone: the smaller the quantity of flour that comes out and the maximum condition of flour that comes out is 2.1 kg at an altitude of 2.5 meters at 120oC, the final temperature of flour exits (T2) went down and experienced a maximum condition of 39oC at an altitude of 2.5 meters with a temperature of 120oC, the water content dropped and experienced a condition of maximum moisture content that could be drained by 14.651%. At an altitude of 4.5 meters with a temperature of 120oC, the residence time increases and experiences a maximum condition of 7.65 seconds at an altitude of 4.5 meters with a temperature of 100oC.
