Abstract

Drying is a process where the reduction in water content can extend the shelf life of food products so that they can be consumed longer. The material used in the drying process is cassava. The drying process will take a long time if it is done by using sunlight as a heat source. Therefore this study aims to create a mechanical device that can help speed up the drying process. One of the mechanical devices used in the drying process is a rotary dryer type dryer. This study aims to create a simple rotary dryer prototype so that it can be useful for entrepreneurs in the food industry. The design of the tool uses a variation of fin cylinder rotation with a load mass of 1 kg and 1.5 kg. The data generated after the research was carried out at 1 kg loading mass obtained temperature changes, namely 630.23 ° C, 683.03 ° C, 667.57 ° C, and 547.60 ° C. The resulting heat is 1174.64 W, 1376.40 W, 1586.81 W and 1656.64 W. Changes in cassava mass are 0.23 Kg, 0.4 kg, 0.32 kg, and 0.3 Kg. The efficiency obtained is 26.23%, 33.47%, 35.52% and 36.37%. Where as in a cylinder with a load mass of 1.5 kg obtained changes in temperature of 604.07 ° C, 613.16 ° C, 647.63 ° C and 635.43 ° C. The resulting heat is 1127.31 W, 1224.07 W, 1534.47 W and 1940.39 W. Changes in cassava mass are 0.28 Kg, 0.38 Kg, 0.5 Kg and 0.4 Kg. The efficiency obtained is 26.36%, 30.30%, 38.58% and 43.66%. The results showed that the faster the cylinder rotation at a speed of 26.25 rpm, 30 rpm, 42 rpm, and 70 rpm for changes in heat fluid and changes in cassava mass is not necessarily increasing because the steam in the cylinder that is not sucked out by the blower affects heat absorption in the product dried, while the hot fluid received by cassava will be greater so that efficiency will also be greater.
