Abstract

Shrimp shell waste can be processed into chitosan. Immobilization of enzymes is carried out to facilitate the separation of the enzyme and the resulting product. The advantage of using immobilized enzymes is the increased stability of enzymes, enzymes can be used on an ongoing basis. Immobilization of papain aims to find the optimum conditions at pH, time, concentration and reusability in papain immobilization. In this research using several stages of raw material preparation, immobilization of papain on chitosan with several variations of 3, 6, 9 and 12 hour time variation, pH variation of pH 5-7 and variation of concentration ranging from 10, 20, 30 and 40 mg / mL, then Test the reusability of immobil papain enzyme using UV-Vis spektofotometer. In immobilization papain enzyme obtained optimum condition at pH 8, time of 6 hours and concentration 40 mg / mL, while reusability on papain enzyme immobilization can be used 5 times.
