Abstract
Sour carambola, corn silk, and red fermented rice have chemical compound of flavonoid. Flavonoid is bioactive compounds which has potential as antioxidant. The aim of the study is determine the antioxidant activity and quality of fruit syrup sour carambola with variation addition of corn silk extract and red fermented rice. The research used experimental method with Completely Randomized Design (RAL) with two factors of treatments, as factor 1 is combine sour carambola with corn silk (75:25, 50:50, 25:75), and factor 2 is concentration of red fermented rice (0,30ml, 0,15ml, 0,05ml) each treatment was repeated three times. Data collection techniques in this study is descriptive qualitative. The research show highest result of antioxidant activity were found in A1B1 treatment (sour carambola extract 75ml with corn silk extract 25ml, and red fermented rice 0,30ml), while antioxidant activity lowest were found in A3B3 treatment (sour carambola 25ml with corn silk extract 75ml, and red fermented rice 0,05ml). The result of highest quality fruit syrup in term of color,aromas, dan taste on A1B3 treatment (sour carambola extract 25ml with corn silk extract 75ml and red fermented rice 0,30ml).
