Abstract
Pectin is a complex and heterogeneous macromolecule. the main compiler for pectin was a d-galacic acid polimer that was associated with a bond of 1.4 -α- glycosidic. Pectin essentially exploited extensively in food, pharmaceutical, and cosmetic industries as a gel forming ingridient. According the data from the Badan Pusat Statistika (2020), Indonesia's orange productions are 2.772.952 tons. The peel of an orange is generally discarded only as waste, where as an orange’s peels have concentration of pectin. The number of pectin's demands in Indonesia has increased year by year, so one of solution to that growing demands of pectin in Indonesia is to use the waste from orange skin to be processed for pectin. Orange's peels contain high enough concentration of pectin. The research was done to extract a pectin from skin orange's skin using a 250 ml sulfuric acid solvent at various temperatures of 40˚C, 50˚C, 60˚C, 70˚C, and 80˚C, and various time of 40 minutes, 60 minutes, 90 minutes, 150 minutes, and 180 minutes and various solvent concentrations of 0,1 N, 0,125 N, 0,15 N, 0,175 N, dan 0,2 N with a stirring velocity of 500 rpm. Pectin characteristics were done with yield tests and ash levels. The process of pectin includes preparation of raw materials for pectin's extraction, precipitation of pectin, drying of pectin, and analysis of pectin (yield analysis/yield pectin and stipulation of ash concentration).
