Abstract

This study aims to describe the management of the Mulyani Karto Putra fried chicken restaurant business in Sukoharjo and describe the supporting and inhibiting factors that affect the operations of the Mulyani Karto Putra fried chicken restaurant business in Sukoharjo. The type of research used is qualitative with a case study design. Informants in the study include business owners and employees. Data collection techniques were carried out through interviews, observation, and documentation. To ensure the validity of the data, the researcher used source triangulation and technical triangulation. The data analysis technique uses data collection, data reduction, data presentation, conclusion drawing or verification. The results of this study indicate that: 1) the management of the Mulyani Karto Putra fried chicken restaurant business in Sukoharjo is carried out in various fields including the finance department, human resources section, production section, and marketing section 2) In the operational process of the Mulyani Karto fried chicken restaurant business Putra in Sukoharjo has supporting factors including having characteristics that other restaurants do not have, as well as the ease of obtaining raw materials. Meanwhile, the inhibiting factors are the emergence of competitors from similar restaurants, price increases and delays in the supply of raw materials.
