Abstract
Cleanliness of cutlery is an important part and affects the quality of food and beverages. In washing cutlery, washing materials such as detergent and soap are usually used. Soap is a washing agent that can reduce the number of germs. The number of germs is one indicator of the cleanliness of cutlery. The purpose of this study was to determine the total number of germs on dishes that were washed using water without soap and those that were washed with water and dab soap. This type of research is an experiment with a pretest-posttest design method. The population of this study was 30 plates and the sample was taken using a simple random sampling technique with a total sample of 6 plates. In this study, each treatment was repeated three times to meet the research requirements in the field of microbiology. Normality test was carried out using the Saphiro Wilk test with sig 0.526 for water without soap and 0.409 for water and dab soap. Statistical test with Dependent Sample T-test with p = 0.638. The results of laboratory tests showed an average decrease in the number of germs in the sample plates of 180.83kol/cm2 (94%) for washing using water only and 132.5kol/cm2 (96.93%) for washing using water and dab soap. The conclusion of this study is that there is no difference between the total number of germs on dishes washed with water without soap and water and dab soap.
