Abstract

Based on Kepmenkes No. 129/Menkes/SK/II/2008 regarding Minimum Service Standards for Hospital, the indicator for food waste is ≤ 20%. There are several factors that influence the presence of food waste, including taste of food and food consumption from outside the hospital. This study was an observasional research with cross-sectional approach that aimed to analyse correlation between food taste and food consumption from outside the hospital with food waste in hospitalized patients at RSUD Dr. Moewardi. The samples of this study were 40 patients in Flamboyan Room RSUD Dr. Moewardi, who were selected with consecutive sampling. Data were collected using a questionnaire and Visual Comstock method. As many as 65% of patients liked the taste of food served by the hospital and as many as 52,5% often consumed food from outside the hospital. The percentage mean of food waste was 31,85%, which meant that it was not in accordance with Minimum Service Standards for Hospital. There was a significant correlation between food taste (p = 0,000) and food consumption from outside the hospital (p = 0,009) with food waste in hospitalized patients at RSUD Dr. Moewardi.
