Abstract
The condition of eating utensils plays an important role in keeping food fit for consumption. Cutlery used for processing and serving food must meet the criteria ranging from equipment material, equipment integrity, function and cleanliness of cutlery. The number of germs is an indicator of the cleanliness of cutlery. Among the people there are various kinds of dishwashers, including foam sponges and coconut husks. This study aims to determine the differences in the use of a foam sponge washing device with coconut fiber on the total number of germs on the plate and the difference in the decrease in the number of germs on the plate that was washed using a foam sponge with coconut husk. This type of research is an experiment with a pretest-postest method, the sample of this study is a plate of 6 plates with simple random sampling. In this study, each treatment was repeated three times. The statistical test was performed by using the independent sample t-test. Laboratory test results showed that the average reduction in the number of germs on plate samples was 130.83 cabbage/cm^2 (84.46%) for washing using a foam sponge and 101.67 cabbage/cm^2 (76.91%) for washing using coconut husks. The conclusion of this study is that there is no difference between the number of germs on plates washed using a foam sponge with coconut husk.
