Abstract
The emergence of Covid-19 has resulted in food stalls around the campus, where if students return to their respective areas, businesses around the campus will be quiet. If this happens continuously without anticipation, the food stall business will suffer a loss. The purpose of this study was to determine the effect of the Covid-19 pandemic on food stall businesses and the adaptation of food stall entrepreneurs around the UMS and UNS campuses. The method used is a survey method with a population of 72 food stalls based on the strata of different types of food stalls. The analysis technique used is the crosstab method, regional differentiation and ecological geography. The results showed that the impact of covid-19 on food stalls around the UMS and UNS campuses caused the highest decrease in income at street food stalls by 42.56% and 61.92%, the highest decrease in the amount of raw materials was at home food stalls at 36.57. % and 58.75%, the increase and decrease in the selling price of food was highest at home and street food stalls by 5.3% and 12.58%, the highest decrease in the number of customers was at street food stalls at 43.79% and 57 , 74%, the highest reduction in the number of workers at home and street food stalls was 33.33% and 100%, then the decrease in operating hours was highest at home and street food stalls by 8.33% and 10%. The adaptation of food stall entrepreneurs around the UMS campus by increasing prices while food stalls around the UNS campus lowered food prices. Adaptation of raw materials by looking for cheaper raw materials, buying priority raw materials and replacing raw materials with cheaper brands and quality, then adapting food products by reducing food portions and sizes, entrepreneurs reducing working hours during the Covid-19 period, entrepreneurs Food stalls reduce labor and enforce shift work, online sales and taking orders are solutions for food stall businesses around the UMS and UNS campuses to survive the midst of the Covid-19 pandemic.
