Abstract

Background : Food and beverages are the most important necessities of life and potentialially contaminated with pathogene bacteria. Factors that influence the food quality are the behavior of food handlers in the application of personal hygiene and food sanitation. One of the Food Management Places (FMP) that are associated with food handlers is a restaurant. Research Methods : Writing literature survey aims to analyse , reviews and to review the application of article 5 different hygiene and sanitation .This study in a critical review . This study use up journal that data relating to the application of hygiene and sanitation.This study meenggunakan an inclusion criteria covering: the sanitation factors influencing the hygiene, research methodology analytic observational cross the sectional, articles used at least years indonesia in 2010. Research Results : Variables study the most knowledge articles ( 5 ), infrastructure articles, ( 2 ) the role the articles ( 2 ), education ( 2 articles.It can be seen that the hygiene of factors affect sanitation 5 articles in the articles included among others there is a 3 with knowledge and 2 articles haveno connection to knowledge, 2 article have intercourse with infrastructure, 2 articles the role, there is a 1 article have 1 articles relationship with education and no relation education, 1 the articles, there is a 1 article have intercourse with sanitation food processing, 1 article have intercourse with dump site articles and there is a 1 with the motivation. Conclusion : Based on observation, of 5 journal above shows that the most relating to the application of hygiene and sanitation is knowledge restaurants, the p value = 0,000, p = 0,002 value, p = 0,02 value.
