Abstract
The food industry is one of the core pillars that govern the national economy. One of the important commodities in this industry is soybean because the price is affordable but has high nutritional value and is good for health. UKM tofu Bp. Aco is one that operates in the center of the tofu industry in the city of Surakarta. These SMEs still use conventional production methods, namely using human labor. However, these SMEs have experienced a decrease in the number of consumer interests caused by an increasing number of competitors. Waste generated from the production process is also not processed first but is directly disposed of into the surrounding environment, especially liquid waste. However, if processed, this waste can increase the efficiency of production costs. Based on these problems, it is necessary to evaluate the production process so that quality tofu can be produced according to the desires of consumers whose production process does not damage the environment and indirectly reduces costs incurred by SMEs. The method used is Green Quality Function Deployment II. This method includes elements of quality, environmental impact, and cost into a matrix. This matrix compares two concepts including the existing product concepts, namely initial production and proposed production based on the House of Quality, Green House, and Cost House. Based on the calculation results, the proposed production received a satisfaction value of 17.5% lower than the initial production, the environmental impact value was 36% lower than the initial production, and was able to save production costs of up to Rp. 115,172, - from Rp. 6,494,344. So the proposed production becomes an alternative route for the production process that meets consumer needs while remaining environmentally friendly and more cost-effective.
