Abstract

Increasing the fulfillment of adequate nutritional value has an effect on increasing consumption of chicken meat, leaving large quantities of chicken carcass. Chicken carcasses have a relatively low value because they are considered as waste even though there are potential nutrients. It is known that UKM Hikmah in running its business establishes partnerships with collectors and several retailers where in the supply chain network activities experience several obstacles that affect the amount of value added and have an impact on the losses experienced by each supply chain member so value-added analysis needs to be done using the Hayami method to find out the value added value and supply chain risk analysis using the Analytical Network Process (ANP) and Failure Mode Effect Analysis (FMEA) methods to determine the risks that occur. The biggest added value in the supplier chain is 52%, while the smallest added value is at the retailer chain with a percentage of 10%. There are 3 risk mitigation strategies that can be applied to reduce high risk factors in the supply chain as a whole including market risk factors and quality risk.
