Abstract
Drying is a process where the reduction in water conten until it reaches a certain water content so that it can extend the shelf life of food products so that they can be consumed longer. The material used in the drying process is cassava. The drying process will take a long time if it is done by using sunlight as a heat source. Therefore this study aims to create a mechanical device that can help speed up the drying process. One of the mechanical devices used in the drying process is a rotary dryer type dryer. This study aims to create a simple rotary dryer prototype so that it can be useful for entrepreneurs in the food industry.The design of the tool uses a variation of fin cylinder rotation with a load mass of 1 kg and 1.5 kg. The data generated after the research was carried out at 1 kg loading mass obtained temperature changes, namely 478.9 ° C, 508.1 ° C, 515.2 ° C, and 517.9 ° C. The resulting heat is 1372.15 W, 1429.21 W, 1442.2 Wand1444.15 W. Changes in cassava mass are0.23 Kg, 0.21 kg, 0.2 kg, and 0.185 Kg. The efficiency obtained is29.96 %, 30.59 %, 30.62 % and 30.36 %. Where as in a cylinder with a load mass of 1.5 kg obtained changes in temperature of452 °C, 520.5 °C, 544 °C and 546.24 °C.The resulting heat is1320.88 W, 1446 W, 1498.63 W and 1501.23 W. Changes in cassava mass are0.18 Kg, 0.16 Kg, 0.14 Kg and 0.13 Kg. The efficiency obtained is 27.88 %, 29.86 %, 30.32 % dan 30.16%.The results showed that the faster the number of IDF holes in the range 1 – 4 is more and more also the heat which is sucked by the blower so that there is an increase in the temperature and heat of convection in the cylinder while the changes that occur during cassava are increasingly.
