Abstract
Natural vegetable dye is a coloring material derived from plants. One of the herbs that can be utilized as a natural dye is purple sweet potato skin. The purple sweet potato skin contains a larger anthocyanin pigment than the bulb. The purpose of this research is to utilize purple sweet potato skin extract as a natural dye preparation of stem section of krokot with variation of solvent and length of immersion. This research used experimental method with Completely Randomized Design (RAL) with two treatment factors that are solvent type (ethanol and citric acid) and immersion time (24 hours, 25 hours, and 26 hours) and safranin as comparison. The result of the research was analyzed by qualitative descriptive method which consist of contrast and clarity of preparation. The results showed the natural dyes of purple sweet potato skin extract with citric acid solvent and ethanol both showed good results, but the color produced from the citric acid solvent was brighter than the ethanol solvent. While the duration of immersion did not show any color difference on preparations. Natural dyes from purple sweet potato skin extract can color the epidermal tissue, parenchyma, xylem, and phloem krokot stems.
