Abstract
Introduction: improper food handling can cause a disease called bacterial foodborne disease, i.e. the symptoms of the disease are caused by consuming food containing toxic compounds or/pathogen organisms. Food hygiene is all the conditions and measures necessary to ensure the safety and suitability of food at all stages of the food chain. Sanitation and hygiene is important given that the food that is served to consumers (doctors, employees, and patients) should be maintained and guaranteed quality for the sake of food safety. Objective: this research aims to know description of knowledge and behavior of food handlers Sanitary Food Processing with the presence of Bacteria Eschericia coli on beef processed in the Nutrition installation of PKU Muhammadiyah Surakarta. Research methods: this research is observational research with cross sectional approach. The sample in this study are food handlers at the PKU Muhammadiyah Surakarta, kinds of processed beef in PKU Muhammadiyah Surakarta. Sampling techniques in the study is Simple Random Sampling. Data analysis techniques used in this research is with the univariate analysis. Results: Knowledge of food handlers about hygiene sanitation on good categories. Behavior of food handlers about hygiene sanitation on good categories. Most food contain no coliform bacteria. Conclusion: Knowledge of food handlers about hygiene sanitation on good categories. Behavior of food handlers about hygiene sanitation on good categories. Most food contain no coliform bacteria. Key words: knowledge. Behavior. Hygiene-Sanitation. Eschericia Coli
