Abstract

Competition in the food and beverage industry requires businesses to ensure consistent quality of raw materials. This includes Koeslan Coffee Company, a small and medium-sized enterprise (SME) coffee roastery in Surakarta that relies heavily on the quality of coffee beans as its primary production material. Until now, the supplier selection process has been conducted solely through taste tests on small samples, often resulting in specification discrepancies when purchasing in large quantities and leading to operational losses. The purpose of this study is to establish evaluation criteria and subcriteria for evaluating coffee bean suppliers and to rank nine alternative suppliers using a combination of the Analytical Hierarchy Process (AHP) and the Technique for Order Preference by Similarity to Ideal Solution (TOPSIS). The five main evaluation criteria are quality, price, delivery, service, and flexibility, with quality proving to be the most dominant factor based on an AHP weight of 0.462. The TOPSIS calculation results yielded preference values of 0.043 for Banjarnegara, 0.603 for Temanggung, 0.217 for Boyolali, 0.336 for Kudus, 0.507 for Garut, 0.366 for Bandung, 0.689 for Ciwidey, 0.398 for Loa, and 0.299 for Brebes.
