Abstract
This study aims to analyze quality control in the bread production process at the Roti Restu MSME using the Statistical Process Control (SPC) and Failure Mode and Effect Analysis (FMEA) methods. The problem raised is the continued presence of defective products such as burnt bread, flat bread, and inappropriate shapes, which have the potential to reduce product quality. The SPC method is used to identify the type and level of defects through tools such as check sheets, histograms, control charts, Pareto diagrams, and fishbone diagrams, while FMEA is used to analyze the level of failure risk and determine improvement priorities. This study combines quantitative methods and qualitative approaches as a basis. The quantitative approach is carried out by conducting research. While the qualitative approach is carried out to process data related to the production process, types of product defects and product defect factors. The results of the study indicate that the main factors causing defects come from human, machine, method, and environmental aspects. The priority factor for burnt bread defects was found to be inaccurate oven temperature with an RPN value of 175 with a percentage of 48% of the overall defect factor, the priority factor for flat bread was an error during the proofing process with an RPN value of 210 with a percentage of 44% of the overall defect factor, the priority factor for inappropriate bread shape was an error during the proofing process with an RPN value of 210 with a percentage of 47% of the overall defect factor. Based on the results of the analysis, several improvement priorities were proposed, such as the use of a precise oven thermometer and routine calibration, as well as periodic temperature monitoring and implementing a standardized proofing process control system through clear SOPs accompanied by periodic process supervision.
