Abstract

Kebon Keong faced supply disruptions of beef for soto daging production during Ramadan, leading to temporary sales suspension and price adjustments for customers. These disruptions pose risks to profitability and customer loyalty, highlighting the need for supplier evaluation to ensure stable procurement under both normal and critical conditions. This study aims to identify the priority beef supplier for Kebon Keong using the Multi-Criteria Decision Making (MCDM) method, Analytical Hierarchy Process (AHP), and to assess the robustness of the resulting decision through sensitivity analysis. Three suppliers (Supplier 1, Supplier 2, and Supplier 3) were evaluated based on five criteria: price, quality, delivery, flexibility, and responsiveness. After obtaining the weights of the criteria and alternatives, the top three criteria weights were reduced by 15%–90% across 18 scenarios to examine the stability of supplier rankings. The results indicate Supplier 1 as the preferred supplier (0.6784), followed by Supplier 2 (0.2248) and Supplier 3 (0.0968), with consistent rankings across all scenarios. Based on these findings, Kebon Keong can prioritize purchases from Supplier 1 while maintaining Supplier 2 and 3 as backups when disruptions occur, ensuring reliable procurement in both regular and peak seasons.
