Abstract

In making herbal medicine, there are several factors that can affect its quality, such as cleanliness of cooking equipment and storage of herbal medicine, knowledge and behavior of food handlers and water quality. In herbal medicine there is contamination of coliform bacteria originating from the raw materials used, namely from polluted water, poor distribution, and unhygienic water containers. This study aims to determine the presence or absence of coliform bacteria in herbal medicine. This type of research uses the method of literature review (literature review) to determine the relationship between sanitation and the presence of coliform bacteria in herbal medicine. This article search uses the Google Schoolar database, PUBMED, Science Direct, National Library of Indonesia, SINTA. Literature search starts from 2012 -2022. The keywords used in the search for this article are Jamu Gendong, Sanitation, Coliform, "Jamu Gendong", "sanitation", "coliform". Based on the analysis results of eight ISSN indexed articles, and one DOI indexed article. In addition, it was also explained that there were eight articles that were studied using samples of several types of liquid and powdered herbal medicine. The variables used were sanitary hygiene for processing, sanitary hygiene for herbal raw materials, sanitary hygiene for serving herbal medicine, water quality and microbiology of herbal medicine. The conclusion is that the results of the test show that there is a relationship between sanitation and the presence of coliform bacteria in herbal medicine. The presence of Coliform contaminating bacteria in the herbal medicine preparation can be caused by the manufacturing process that does not pay attention to hygiene and is also caused by the use of contaminated water
