Abstract
Gelatin has many uses in industry, especially in the food industry. However, Indonesia is still unable to produce its own gelatin and still imports it from abroad. Cow bones are a source of collagen, the raw material for making gelatin. It is necessary to process cow bone waste so that it has economic value and provides benefits to humans and does not damage the environment. This research aims to determine the gelatin synthesis process with the influence of variations in CH3COOH solvent concentration and extraction time. Synthesis of gelatin from beef bones was carried out with varying CH3COOH concentrations of 5%, 10%, 15%, 20% and 25% with extraction times of 4 and 8 hours and soaking times of 4 and 8 days. Parameters measured in gelatin quality test analysis include tensile strength test, gel strength, pH, yield and antimicrobial test. In this study, the largest gel strength test results were obtained at 5% concentration CH3COOH with a soaking time of 4 days of 33.2 bloom load, the greatest tensile strength at 5% concentration CH3COOH with a soaking time of 8 days was 16.84 MPa, the largest pH value at CH3COOH concentration of 5% with a soaking time of 4 days was 5.34, the highest yield value was 5% with a soaking time of 4 days 2.263 and anto-microbial test < 3 APM/gr.
