Abstract

Escherichia coli bacterial contamination in snack foods can be seen from sanitation facilities and healthy school canteen support. The aim of this research is to determine the description of canteen facilities, school support and Escherichia coli bacteria in the Surakarta city area. The method of this research is quantitative research using quantitative descriptive methods. Data were collected using questionnaires and observations on all 40 school principals and 80 samples of snacks in elementary schools in Jebres District. The results of this research include 15 foods containing 18.75% of Escherichia coli bacteria and 2 drinks (2.5%) containing Escherichia coli bacteria. 19 schools (47.5%) did not have hand wipes or tissue and closed liquid waste disposal channels. 40 schools (100%) have used goose neck latrines, have sweeping equipment, cooking storage and have liquid waste channels in the canteen. 16 schools (40%) have not provided training for canteen handlers regarding food hygiene and sanitation. Only 5 schools (12.5%) do not yet have school regulations regarding canteen cleanliness and periodic food checking from the school. Most schools in Jebres District have good canteen facilities and there is little Escherichia coli bacterial contamination in snacks in the canteen. Only a few schools support the existence of a healthy canteen.
