Abstract

One of the sales of beverages is processed tea drinks with their presentation added with ice cubes that aim to get a fresh sensation in fact become a source of bacterial contamination because the crystal ice cubes are made of raw water which should be a fish preservative, processing equipment that is suspected of being contaminated with the surrounding air and lack of attention to the hygiene of the surrounding environment. The purpose of this literature review is to examine the contamination of Escherichia Coli bacteria and non-faecal coliforms in hygiene, sanitation, processing, raw materials, and presentation of processed tea drinks. This study uses a literature review method to determine whether there is contamination of non-faecal Escherichia Coli and Coliform bacteria in hygiene, sanitation, processing, raw materials, and presentation of processed tea drinks. This journal search uses Google Scholar, PUBMED, Science Direct and National Library. The results of the analysis of five (5) journals studied are indexed by ISSN and 2 indexed by DOI. In addition, from the five journals studied there were various tea samples namely iced tea, Milk Tea and Thai Tea and also various research designs such as the MPN (Most Probable Number) method with a total of 3 journals and 2 other journals using quantitative descriptive methods, opinion assessment methods, survey methods and analysis methods. Of the 5 journals studied, it was found that there was contamination with positive contamination of Escherichia coli bacteria, namely 3 journals and positive contamination of Coliform bacteria, namely 2 journals with factors causing possible contamination in processed tea drinks are water that used to make drinks, ice cubes that was added, water for washing processing equipment and cleanliness of the surrounding environment.
