Abstract

VCO (Virgin Coconut Oil is a processed coconut product that has benefits and high selling value. In this study, VCO was made using the meseration method because it is easier to apply in society. The purpose of this study was to find out the best treatment for making VCO. Determination The optimal number of coconuts to get the highest amount of VCO and determine the maceration time needed to make VCO is the goal of this study. Apart from that, the large number of coconuts used does it affect the organoleptic test of VCO based on SNI 7381: 2008. The results of this study show that the amount of coconut does not affect the oragonelptic of the VCO produced. The more coconuts used is directly proportional to the amount of VCO produced. The time needed to carry out the maceration process is 24 hours. The results of the chemical properties of VCO are mostly in accordance with SNI 7381: 2008 except for the Iod number, metal content and total plate number.
