Abstract

Background Tofu is one of the most popular food ingredients in Indonesia because it can meet their protein needs at a low price, but over time, issues of tofu containing formaldehyde have been found. buy it at the Jungke market, Karanganyar Regency. The population of this study was all white tofu with a total sample of 12 tofu sold at Jungke Market, Karanganyar Regency. they were using a descriptive method with a semi-quantitative qualitative analysis approach taken using the Accidental Sampling technique. The results revealed that 10 positive tofu samples contained formalin using the KIT ET (Easy Test) qualitative test and 10 formalin-positive tofu samples had formalin levels <2 mg/L using the KIT Fast Test quantitative test. It was found that the percentage of tofu contained formalin was 83.3%. , From the observation of the physical properties of tofu, there were 5 samples suspected of containing formalin. Conclusion Observations from the Qualitative Test found 10 samples with purple discoloration. Observations from the Quantitative Test revealed 10 samples with purple discoloration. Observations from the physical characteristics of white tofu were known to contain formalin, there were 5 samples with the characteristics of supple, hard, dense, and thick. white tofu research was positive for containing formaldehyde with a percentage of qualitative tests and 83.3% of the quantitative test. The government's suggestion could be to better monitor food ingredients traded by traders in the market. The community must be more vigilant in choosing food ingredients, and producers making food additives are advised not to use formalin and other chemicals that can be harmful to health, for preservation they can use natural ingredients.
