Abstract

Eating utensils are one of the factors that play a role in transmitting disease. This is because eating utensils those are not clean and contain microorganisms can transmit foodborne disease which can cause Extraordinary Food Poisoning Events. The total number of germs is one indicator of the cleanliness of cutlery. To maintain the cleanliness of tableware, washing needs to be done, in washing tableware using washing materials such as powder detergent and lime (Citrus aurantifolia Swingle) as an addition to the fresh aroma of natural ingredients that are often found in people's lives. The purpose of this study was to determine the difference between the use of powder detergent and powdered detergent mixed with lime (Citrus aurantifolia Swingle) on the total number of germs on the plate. This type of research is an experiment with the pretest-postest method without control design. The sample of this study used 6 ceramic plates with random sampling. The results of laboratory test showed an average decrease in the total number of germs on the plate by 20.83 colonies/cm2 (76.18%) for powder detergent and 80.83 colonies/cm2 (92.77%) for powder detergent mixed with lime (Citrus aurantifolia Swingle). The results of the independent t-test statistical test showed that there was no difference between the use of powder detergent and powdered detergent mixed with lime on the total number of germs on the plate significantly (p= 0.274 > 0.01) 99% significant.
