Abstract
Formalin is a food additive that is prohibited from being used in food and is harmful to human health. In fact, there are still many who abuse formalin as a preservative, one of which is tofu to extend the shelf life for a longer time. Formalin in tofu has been found in several traditional markets and supermarkets, but no research has been conducted in traditional markets and supermarkets in Surakarta City, so researchers are interested in conducting this research. This study aims to analyze the content of formalin in tofu from traditional markets and supermarkets in the city of Surakarta. This type of research is a descriptive study with a qualitative analysis approach using the KIT Test colorimetric method. The population of this research is all tofu sold in traditional markets and supermarkets in the Surakarta City area, a total of 29 tofu from different manufacturers. The sampling technique is by Accidental Sampling. Data were analyzed descriptively. The results of the research from physical observations of tofu seen from the bright white color, hard, and not easily crushed when pressed, there are 3 tofu that have the characteristics of formalin tofu from traditional markets and 2 tofu from supermarkets. The results of the qualitative test showed that from 25 samples of tofu from traditional markets in the Surakarta City area, there were 2 (8%) positive samples containing formalin and 23 (92%) negative samples containing formalin. While the results of the qualitative test on tofu showed that from 4 samples of tofu from supermarkets, all of them were negative for formalin. Tofu that contains formaldehyde is not safe for consumption and is harmful to health. It is recommended to consumers to always be careful in choosing the food products they consume and to producers not to use prohibited food additives.
