Abstract
Pineapple jam macarons are one of the modern types of cookies where Its manufacture uses a peanut composite flour substitution with pineapple liver flour, powdered sugar, and egg whites. Pineapple Jam Macarons has a variety of colors coupled with pineapple jam filling has a unique taste and also a more attractive appearance. These Macarons different from macarons in general because they are made using peanut and pineapple liver composite flour and stuffing with pineapple jam which has a higher nutritional value. Utilization of pineapple liver by making as a flour is one of the new innovations to suppress the amount of pineapple liver waste that is thrown away because it is considered no longer available reused even though it contains nutrients that are good for body. Of course, this utilization can also help pineapple market share in Indonesia is increasing. Therefore, of course this macaron will have a special attraction for consumers who have taste unique and delicious and the selling price is more affordable than macarons on generally. This PKM-K aims to utilize local food ingredients to used as a processed snack that contains high antioxidants. Besides that, it can also open up the pineapple market share in Indonesia increasing the marketing of processed food products high in antioxidants in the environment Public. Pineapple Jam Macaron packed in a closed box made of paper ivory with a variety of colors so as to ensure cleanliness and the safety of the Pineapple Jam Macaron product.
