Abstract

One of the factors that can meet the degree of public health was the provision of food and beverages that meet health requirements. The food and beverage’s hygiene is influenced by the hygiene of cooking utensils and cutlery used in the process of providing food and beverages. The research method used was a literature review. The purpose of this literature review was to determine the relationship between hygiene and sanitation and the content of Escherichia coli bacteria on tableware in restaurants. In addition to knowing other factors that affect the contamination of tableware with E. coli. The results obtained after reviewing 5 literatures are 3 of 5 literatures stated a relationship between personal hygiene and the content of E. coli bacteria on the surface of tableware.
