Abstract

Street food in schools has a high enough risk of being contaminated with bacteria, traders only use carts and makeshift facilities. Sanitation facilities such as the provision of clean water, processing of solid waste and liquid waste that do not meet health requirements. This condition can lead to contamination of Esche- richia coli bacteria in the food or drinks sold. This research is in the form of a lit- erature review with a research method summarizing seven research journals to prove the relationship between food hygiene and sanitation and contamination with E. coli bacteria in school snacks. The source of the articles used is from Google Scholar and the Health Journal with the keyword articles in the form of "Food Sanitation Hygiene", "Escherichia coli Bacteria Contamination", "School Snacks", "Hygiene", "Sanitation", "Escherichia coli Contamination" , “Snack Food” The inclusion criteria used a Cross Sectional approach, national journals indexed by Sinta or with ISSN (International Standard Serial Number), interna- tional journals indexed by Scimago and research used between 2010-2021. The method used is to summarize the journal, analyze, and draw conclusions. The re- sults of the seven journals obtained indicate that personal hygiene or handler hy- giene has a significant relationship with Escherichia coli contamination in snacks. Poor personal hygiene such as not washing hands, not wearing an apron, smoking while cooking and environmental sanitation conditions close to landfills, this causes Escherichia coli contamination.
