Abstract

Herbal tea is a drink made from leaves or flowers. One of the ingredient innovations in making herbal teas is butterfly pea flower and mint leaf. Butterfly pea flower contains flavonoid, anthocyanins, and flavonol glycosides which are compounds that prevent free radicals. Mint leaf contain 1-2% essential oil dan 80-90% menthol which gives mint typical taste. The purpose of this study was to determine the antioxidant activity of the herbal tea combination of butterfly pea flower and mint leaf with variations of drying time. This type of research was an experimental research with a completely randomzed design (CRD) with two factors. The first factor was the combination of butterfly pea flowers and mint leaf of ratio 1:1 (2 g : 2 g), 2:1 (4 g : 2 g) and 3 : 1 (6 g : 2 g). The second factor was the variations of drying time that were 90 minutes and 120 minutes. The result of the study showed that the highest antioxidant activity of herbal tea was in the K3L1 treatment (the combination of butterfly pea flowers 6 g : mint leaf 2 g with drying time of 90 minutes ) 83,147%. The best organoleptic quality of herbal tea was K3L1 treatment (the combination of butterfly pea flowers 6 g : 2g of mint leaf with drying time of 90 minutes ) had a dark blue color, mint flavor, not bitter taste ,also fresh and quite.
