Abstract

Foodstuffs that have been damaged due to the activity of microorganisms have decreased the quality of the food and are not suitable for consumption. Bacillus cereus bacteria is one of the destructive bacteria in meat that produces two types of toxins, namely emetic and diarrhea. To maintain food safety and body health from microbiological infections, efforts can be made to reduce bacterial growth. Some natural ingredients that can be used as antibacterial properties are fragrant pandanus leaves (Pandanus amaryllifolius Roxb.) and basil leaves (Ocimum basilicum L.). The purpose of this study was to determine the test difference of the combination of fragrant pandanus leaves extract and basil leaves extract on the growth of Bacillus cereus ATCC 11778 bacteria. This type of research is experimental with the CRD approach (completely randomized design). This study used a paper disk diffusion method with 6 concentrations of treatment, control (+) and control (-) which was repeated three times. Data analysis used the Kruskal Wallis test. The results showed that the inhibitory power was formed starting from a concentration of 25%, 50%, 75%, and 100% with a mean of 7 ± 0,5 mm, 7,67 ± 0,58 mm, 8,17 ± 0,76 mm dan 11 ± 1,73 mm, respectively. The conclusion of this study is that there is a test difference of the combination of fragrant pandanus leaves extract and basil leaves extract on the growth of Bacillus cereus ATCC 11778 (Sig 0.007 <0.01).
