Abstract

Anthocyanin is a substance that is abundant in nature. This compound has a core structure of anthocyanidin that is bound to one or more glycosidic clusters like glucose. Anthocyanin has many health benefits, one of which is antioxidant. The results of research publications suggest that antioxidant activities of anthocyanin greatly exceed vitamins C and trolox. The purpose of this research is to compare and understand the extent of antioxidant activity which is held by anthocyanin compound in vitro test from multiple references. The research is a literature review of various articles according to the inclusion and exclusion criteria collected from "pubMed" and "Google scholar"database. Research has shown that anthocyanin has a good antioxidant activity through free radical scavenger mechanism and metal ion reduction. Such activity is affected by structure formations and clusters such as hydroxyl and catechol structures on rings A and B and clusters 3-OH on ring C. The increased of sugar substituent has a small effect on antioxidant activity of anthocyanin, while alkylation and acetylation clusters have a fixed position of C5, C7, C8, lowering its antioxidant activity. Some monomers such as cyanidin-3-O-galactoside, delphinidin-3-O-rutinoside, malvidin-3-O-glucoside, cyanidin-3-O-glucoside, cyanidin-3-O-b-D-(6-(E)-coumaroyl) glucopyranoside, and peonidin-3-caffeoyl-p-hydroxy benzoyl sophoroside-5-glucoside are known to contribute well to antioxidal activity.
