Abstract

Flavonoid is one of phenolic compounds found in plants, and can act as antioxidant. Flavonoids are usually contained in green plants, as in sapodilla leaves. This study aims to determine the level of flavonoids in sapodilla leaves extracted by maceration method. The solvent used was ethanol 70%, and the studied variabels included the mass ratio of sample – solvent (12:100, 12:200, 12:250) and the time of maseration (24, 48 hours). Of all the tests carried out, the highest level of flavonoid was obtained to be 29,43% at the mass ratio 12:100 and time of maseration 24 hours.
