Abstract

This study aimed to determine the effect of storages time of enteral modisco added with cob fish (Euthynnus Affinis) on peroxide and pH value. The study design was experimental in laboratory with sample was enteral modisco added with cob fish and controls were standard of enteral modicso made using coconut oil and fish oil. Storage durations of enteral modisco were on 0, 3 and 6 hours, based on food serving in hospital. The parameters observed were peroxide and pH values. The results showed that peroxide value were detected in all samples during storage times, ranging from 0.225-0.895 mL ekv/kg, which is categorized in normal range according to SNI-3741-2013 of <10 mL ekv/kg. The highest peroxide value was found in enteral modisco added with fish oil with a storage time of 6 hours, which was 0.895 mL ekv/kg, while the lowest peroxide rate was found in enteral modisco added cob fish in 0 hour storage time which was 0.225 mL ekv/kg. The highest pH was found in enteral modisco added fish oil in 0 hour storage time of 6.94, while the lowest pH was found in enteral modisco added with cob fish in 6 hours of storage which was 6.52. There was no effect between the length of storage of enteral modisco added cob fish as well as coconut oil and fish oil on peroxide dan pH values.
