Abstract

Background: Food is part of society which cannot be separated. Chili sauce is an ingredient addition which is used by sellers to give a better flavor and the product enticement. The healthy food to consume must be free from physical, biological and chemical contamination. The use of Rhodamin B to give coloron food can be dangerous if it is consumed. The researcher conducts this research in Universitas Muhmmadiyah Surakarta since there are a lot of street food sellers around the campus. Objective: To analyzethe Rhodamin B in chili sauce on street food around Universitas Muhammadiyah Surakarta. Research method: This study employs descriptive observational method. The research samples are 24 chili sauce samples on the street food around the university.The Rhodamin B analysis is conductedinthe health laboratory of Yogyakarta using qualitative method with the sauce extraction test stage, Thin Layer Chromatography (TLC) analysis. All of tests stated above areconducted twice to ensure the result. Result: Of 24 samples are used by food sellers, there are 22 sellers (91.6%) who uses A brand chili sauce. The results of the Thin Layer Chromatography (TLC) test when it was observed under 254 nm and 366 nm UV lamps shows that the sample has visible stains, but the distance is not parallel to the stain from the Rhodamin B standard. Furthermore, when it is visually seen the stain is not pink as well. Based on the RF value, the sample is not the same as the Rhodamin B standard and has Rf >0,2 difference value. Based on the Rf value, the sample does not contains Rhodamin B. Conclusion: The 24 sauce samples taken around Universitas Muhammadiyah Surakarta are tested Rhodamin B negative.
