Abstract

Introduction: Food handlers are people who directly process the food from preparing food ingredients until serving food, so that the knowledge hygiene sanitation, the attitudes and the behavior of food handlers as well as understanding the SOP of hygiene sanitation must be considered because those things affect the quality of food that is produced. Objective: To find out the description of the level of understanding the SOP and hygiene sanitation knowledge of food handlers with the compliance of hygiene behavior in Nutrition Installation of RSUD Dr. Moewardi Surakarta. Research method: This research is descriptive. The population and sample in this research were 42 food handlers at the Nutrition Installation of RSUD Dr. Moewardi Surakarta. The data regarding understanding the SOP and the knowledge of handlers are obtained by distributing questionnaires to be filled out meanwhile the compliance behavior of food handlers is obtained by using observation method. Result: As many as 88.10% of the food handlers have good level of understanding the SOP, while those with sufficient category are 11.90%. Food handlers who have good knowledge are 95.23% while those who have enough knowledge are 4.8%. Most of the compliance behavior of food handlers has good category of 78.6% meanwhile the rest with sufficient category are 21.42%. Conclusion: The result showed that most of the level of understanding SOP, hygiene knowledge and behavioral compliance of food handlers had good categories. Improper hygiene behavior is related to the use of masks. Suggestion: Nutritional installation needs to improve guidances on compliance behavior of food handlers regarding sanitation hygiene.
