Abstract

The patients’ food waste can be affected by several factors including the quality of food service. The quality of food service can be seen from the food presentation and taste. The quality of food service needs to be considered in order to increase the quality of food service so that the patients feel satisfied with the food served in the hospital. Objective : This study aims to know the corelation between quality of food service and food satisfaction level patients with plate waste in hospitalized diabetes mellitus type II patients at NU Islamic Hospital of Demak. Methods : This research was conducted using cross-sectional design. The subjects in this research were 42 Mellitus Diabetes type II patients at NU Islamic Hospital of Demak using consecutive sampling method. The data of service quality and the level of satisfaction were gained through questionnaire. The data of the leftovers were 2 collected from the Comstock form. The test used in this study was Rank Spearman test. Result : Based on the subject characters, most of the respondents were female (61,9%), with the education level 59,5% of them were graduated from high school, 66.7% of respondents were in age range 51-75 years old, 38,1% of respondents were housewives, and most of the respondents were in hozpitalization class III (59,5%). Based on statistical analysis, there was a relationship between the quality of food service with plate waste hospitalized diabetes mellitus type II patients in NU Islamic Hospital of Demak with the value of p= 0,000 and r= -0,542. There was a relationship between satisfaction of food with plate waste hospitalized diabetes mellitus type II patients in NU Islamic Hospital of Demak with the value of p= 0,007 and r= -0,412. Conclusion : Based on the analysis result, the study can be inferred that there were relationships between the quality of food service and satisfaction of food with plate waste hospitalized diabetes mellitus type II in NU Islamic Hospital of Demak.
