Abstract

Background : Food quality is one of the external factors affecting food waste. The standard of food quality consists of two main aspects : the appearance of the food and the taste of the food. Food waste is an indicator of the success of hospital service. Based on the data, the food waste at RSU Aminah Blitar in February 2016 was higher compared to that of national standard (20%). Objective : This study aims to determine the association of food appearance and food taste to food waste of inpatients at RSU Aminah Blitar. Method : This is an observational research with cross sectional design. A total of 62 subjects were recruited using accidental sampling technique. The characteristics of the respondents were obtained using interview. Data of food appearance and food taste were obtained using questionnaire, while data of food waste were obtained using comstock method. The normality of the data were tested using Kolmogorov Smirnov Test and the association of food appearance and food taste to food waste were tested using Pearson Product Moment and Rank Spearman’s correlation test. Result : 83,9% of the respondents said that the food appearance was interesting, while 79,4% of 2 the respondents said that the food taste was good enough. 71% of the respondents had < 20% of food waste. Conclusion : There is no association between food appearance and food waste (p=0,152) and there is no association between food taste and food waste (p=0,141).
