Abstract

Tofu is still a favorite food of Indonesian society. This food is made by clotting process with the help of acid solution which then become curd. Entrepreneurs know to have mushroomed in various regions in Indonesia. One of them is Karanganyar village, Weru, Sukoharjo which is the center of tofu industry. Some entrepreneurs know there are already migrants using steam boiler, but there are still some entrepreneurs who use traditional stoves. In this research, an analysis of production costs of tofu factories can be calculated by comparing the percentage of product cost in 6 tofu factories, namely raw material cost, fuel cost, employee cost and electricity cost. From the results of this study found that the use of steam boiler can save fuel in production costs. That is, from the analysis result for the traditional furnace method the percentage of fuel is 10,00%; 8,18%; and 6,19% while for steam boiler amounted to 2,82%; 4,68% and 6,31%. The use of steam boiler is also higher profits (per 100 kg) of Rp 996.345 when compared with traditional stove which only amounted to Rp 556.160.
